This Is How To Survive 1 Month Plant Based No Meat
I survived one month plant based, no meat and this is how I did it. First things first, I have been a carnivore for as long as I can remember. I wasn’t excessive with it, meaning I would eat chicken, fish or turkey at least once a day with a meal. That’s natural, right? I try to cook and eat nutritious meals that are balanced with vegetables, whole grains and healthy fats.
The Why
But why now, Zenja? Well, there are a couple of reasons:
1- I gained about 20 extra pounds over the last two years due to Menopause. I needed to take actions in the way of my diet to feel better physically.
2- As a person who has always been active, I felt out of control, with what is happening to my body. I felt inspired by people like Tabitha Brown, who became a vegan from a 30-Day challenge to save her life.
The Plan
I have been a meal prepper at different times in my life, in order to maintain my weight and health. So, I knew I had to set myself up for success with a plan! I shared my idea with my SO (Significant Other). He was so supportive that he grabbed me a couple of cook books. I then went online and landed on Veganuary.com.
They do a 30-Day Vegan Challenge. I signed up with my email, and they sent some basic facts to support first time vegans along with daily emails and some simple recipes to get the ball rolling. So, I started on June 1 and jumped in! Now to be clear, I did have an egg or two, which is why I went plant based and not strictly vegan.
Sample Daily Meal Plan
Breakfast– Tofu Scramble with potatoes, onions, peppers, mushrooms and toast
Snack– Protein Shake- vegan protein, blueberries, dark cherries, half a banana, oat milk,
Salad– Spinach, Romaine Lettuce, Black beans, corn, red onion, avocado & Cilantro Vinaigrette
Dinner– Sauteed Cabbage, peppers and onions over quinoa and Beyond Meat streak
The Results
I completed all 30 days! There were some tough days, when I didn’t prep like I should have with the task of three to four plant-based meals. The task felt nearly impossible, but I kept going. I remember a couple times where I wanted a piece of chicken, more than I wanted anything! But I kept going! I am now down six pounds and I really do feel better. My hot flashes are considerably less, and I am still going! I am now committed to changing and opening my mind as my body changes.
