This las Vegas restaurant will put you in potato heaven: Let us introduce Twice Baked Potatoes.
Loaded baked potatoes are very common in the U.S. But exactly what are twice baked potatoes?
Basically it’s a way to eat mashed potatoes in a little potato bowl. The first bake is roasting the potatoes so they are nice and tender. While the outside gets crispy, the inside gets creamy, making it the perfect foundation for your filling. The second bake involves mashing all of your cooked potatoes with butter, cheese, milk, and other ingredients, then filling the potato skins back up, topping with more cheese, and baking until everything is warm and ready to eat. Sounds delicious right?
I had to stop by Twice Baked Potatoes and try for myself. A beautiful restaurant located at 6020 W Craig Rd #130, Las Vegas, NV 89130. I was greeted as soon as I walked in the door with a friendly smile and a comforting “hello,” from the staff.
The menu has so many options to choose from. Beef, chicken lobster, shrimp, vegan and veggie egg rolls, award-winning Motley tacos, salads and of course twice baked potatoes. You can order it your way by first choosing your protein. Bacon, chicken, shredded beef, ground turkey, salmon and more. Then pick your toppings, from sautéed white onions, green onions, regular or vegan sour cream, broccoli and more. and finally choose your cheese. Even their dessert menu will have your mouth watering.
I sat with the owner Rochelle Hodge, and she explained how her business was a “successful accident.” A former 25 year successful hair stylist who would go out to the streets of Las Vegas with her tent and a full kitchen to sell her gourmet potatoes as a side Hussle until it grew into a full brick and mortar.
I tried the classic Potato filled with chicken, crispy bacon, cheese sauce, sour cream, shredded cheese and green onions. I couldn’t stop eating, it was beyond delicious. the homemade chicken egg rolls were so crispy and seasoned to perfection.
